[[NB The second translation is from the NIV]] I see this passage as a continuation of 2:1-12, where Jesus demonstrates his authority as Son of Man by forgiving the sins of the paralysed man. As far as I understand the timeline, the calling of Levi occurs shortly after the healing of the paralytic, and so those who were around at the time would know what Jesus had just done when they saw him speaking to Levi and eating with him. When Jesus declares, "I have not come to call the righteous, but sinners" , I believe that this is to be seen as a continuation of the demonstration of his authority. He's demonstrated that he possesses authority, and now explains why he has come with that authority. Jesus has come with the ability to cast out demons, heal the sick, and most importantly to forgive sins - and all so that he can call us , sinful as we are, to himself!

A large crowd came to him,

And as he reclined at table in his house, many tax collectors and sinners were reclining with Jesus and his disciples,
While Jesus was having dinner at Levi's house, many tax collectors and "sinners" were eating with him and his disciples,
for there were many who followed him.
for there were many who followed him.
And the scribes of the Pharisees, when they saw that he was eating with sinners and tax collectors,
When the teachers of the law who were Pharisees saw him eating with the "sinners" and tax collectors,
said to his disciples, "Why does he eat with tax collectors and sinners?"
they asked his disciples: "Why does he eat with tax collectors and 'sinners'?"
And when Jesus heard it, he said to them,
On hearing this, Jesus said to them,
"Those who are well have no need of a physician,
"It is not the healthy who need a doctor,
but those who are sick.
